Do you want the drywall flush with the stone or just the illusion that the stone goes beyond the drywall? An easy way depending on the size of wall would be to add another sheet of drywall over what currently exists. You'll have some screw holes and taping to do but it will give you a cleaner look than cutting into the drywall.
