Hi guys,

 I'm a faux finisher, plasters, metalics, etc. but I'm amazed at the artistry and talent in your field.

I applaude you. I have a customer who just bought a house and the previous owner glued z-brick to the walls in the kitchen.  She hates it and would like either a smooth wall or slightly textured.

The mortar joints are a little deepto start troweling plaster on, ( I think) Any thoughts?  Would truly appreciate your input

I would use Indiana plaster or Arccus Stone Plaster ...using a vertical wall mix with really thin applications could really give you problems in the cracking arena. If you are gonna "design and texture" the wall I would at least put up an 1" of material with your traditional mixes.
