Very nice...a few years ago many custom homes here in N. California were going up that could have used this finish in lieu of slabs of actual marble. Would this system work in a bathroom impacted by moisture from a nearby shower (not as a shower surround of course).

absolutely!!! These are lime grassello and marble based. These finishes have a rich history that dates back to the Egyptians and over time altered/perfected by Moroccans and more widely known Roman/venetian italians. They needed to be "hydrophobic" being in the Venito region lagoons of italy. They absorb moisture (unlike synthetic stucco) which can blister/pop because they trap moisture leaving hydrostatic pressure causing delaminating to occur. Instead they wick away moisture by first absorbing and then repelling. There are natural Bee's wax and olive soaps that are applied or silanes/siloxanes solvents if you are still worried about performance. Tadelakt is a Moroccan lime stucco that was specifically designed for spa and bath houses. Durability is worth out question, try to stick your thumb nail into the plaster, no luck.... will it last?.... there are still facades in rome/venice with the original stucco still intact and many look like they were done only a decade ago and they are well over 500 years old.... So to answer.. yes very hydrophobic... very durable......... BUT!!! you have to use the real thing... no room for imitations it makes the difference between a successful finish and a nerve racking failure... I can point you in the right direction if you need sources.
