Seeing the various additives used for special application mortars over the past 1900 years, makes me appreciate the modern era's ability to synthesize.
Table 8: The effect of natural organic additives on lime-based mortars (4; 9; 5; 35)
Type of additive Natural compound
Increasing strength - Sugar, molasses, fats, fruit juices, rye dough, rice starch, gluten,
curdled milk, egg white, vegetable gums, casein, cheese, blood

HELLO JEFF!! sorry for the delay in response to your ques!! thanks a ton for the kind words!! viewing the pic of one of your doors i see they appear in great shap as you stated as for what i would do for a more handrubbed aged look i have to options the first would be to strip this glossy finish with a gel or spray on stripper and scrape then dry and sand the surface stain and then use either a hand rubbed urethane that they sell or my way wich is take a satin floor urethane and dilute it about 30% with lacquer thinner not mineral spirits or anything else just lacquer thinner and wearing gloves apply by hand and rag several coats will be necessary.
another way but probably not as effective would be to just sand each door down with 120 grit sand paper then apply finish as stated but you will not be able to stain effectively this way due to the fact that the original finish will still be tthere barring the absorption of the stain.
i hope this helps please mssg me with any ques!!
